Ester was founded by miners, and mines continue to operate in the area today. Likewise, somebody has to feed all those miners and artists, and farmers, gardeners, and other plant tenders grow their flowers, vegetables, and herbs in the summertime. Farming Calypso is a nonprofit educational farm dedicated to encouraging local food production and environmental awareness through hands-on education in natural and farming ecosystems. The farm runs a community shared agriculture program, holds tours, and cooperates with area schools with food and gardening-related curricula, animal husbandry, workshops, and other programs. Calypso also operates a farmstand in downtown Fairbanks and at the Ester market. Grey Owl Garden Matt Springer's green thumb has been trained at Calypso Farm and Rosie Creek Farm, and for the last couple of years he has been selling his own produce. He sells produce and plant starts at the Ester market. Mike Emers and Joan Hornig run this certified organic farm, selling at the Tanana Valley Farmers Market and the Ester market and through their community supported agriculture program. Rosie Creek sells bouquets of specialty cut flowers as well. Rosie Creek is a vendor at the Ester market. Foods & Specialty Edibles (see also Entertainment) Kate Billington Kate is a well-known local cook, musician, and gardener. She sells specialty spice mixes, teas, and plant starts at the Ester market. Bun on the Run Summer and Elizabeth own this popular sandwich, pastry, and coffee shop that sets up every summer near Beaver Sports on College Road. Bun on the Run is a participant in the Ester Community Market. Greer Family Honey Amy Greer and her family sell local raw honey from the heart of Alaska; their honey is certified Alaska Grown.
